Instant Pot Keto Beef Balsamic Vinegar and Heavy Whipping Cream
Keto Pulled pork is easy to make in the Instant Pot with the Balsamic Pulled Pork recipe. A nice sweet flavorful pulled pork, but without the carbs. This electric pressure cooker version is so much faster to make than a slow cooker pulled pork too.
Keto Pulled Pork
While proteins are generally low carb, a sweet yet sugar free glazed pulled pork needs recipe adjustments. In this keto pork recipe, erythritol based Swerve brown sugar substitute is used in conjunction with balsamic vinegar to sweeten the pulled pork while keeping it low carb. The glazed pork has 3 net carbs per serving.
Erythritol is a sugar alcohol and does not spike insulin. It is generally considered keto-friendly.
Instant Pot Pulled Pork
Making Pulled pork in the instant pot is far quicker than with a crock pot, in the oven or on the stove top. Tender shredded pork is ready with this method in minutes rather than hours.
Pork shoulder or butt are cheaper cuts of meat, that make eating keto affordable. The instant pot makes serving these traditionally tough cuts quickly possible.

How to Make Keto Balsamic Glazed Instant Pot Pulled Pork

Ingredients for the Pork
- 2 lbs. Boneless pork shoulder roast or Boston butt roast meat cut into large chunks
- 2 Tbsp. Olive oil (avocado oil or ghee are also good choices)
- 1 ½ tsp. Italian seasoning
- 1 tsp. Garlic powder
- Salt and pepper to taste
- ½ C. Swerve brown sugar substitute (sweetness, from sugar alcohols)
- ¼ C. Balsamic vinegar
- ¼ C. Soy sauce
- 1 C. Water
- ¼ C. Heavy cream
Instructions:
Place 2 tablespoons of olive oil in the bottom of the Instant Pot, and turn it to the saute function.
Season the pork butt or shoulder pieces with salt and pepper, then add to the heated Instant Pot.
Sprinkle the Italian seasoning and garlic powder over the pork, and saute until it is browned on all sides.
In a small bowl, whisk together the Swerve brown sugar substitute, soy sauce, balsamic vinegar and water.
Pour the sauce mixture over the pork in the Instant Pot, and place the lid on, being sure that the pressure valve is turned to the "sealing" position.
Set the Instant Pot to pressure on the manual setting for a cooking time of 25 minutes.
Once the time is complete, let the Instant Pot go through a slow release for 5 minutes before carefully turning the pressure valve to the "venting" position to release any additional pressure.
Remove the pork from the Instant Pot, and shred with two forks.
Set the Instant Pot back to the saute function, and add the heavy whipping cream to the sauce, whisking thoroughly.
Continue to let the sauce saute and cook down until it thickens.
Add the shredded pork back to the Instant Pot, and toss to coat in the sauce before serving.
Serving
This keto pork is great over cauliflower rice or cauliflower mash. Serve it in lettuce wraps or wrap in cloud bread for lunch.
Leftovers are great for meal prep. You will be able to use the pork for extra dishes in your meal plan, particularly if you have a small family.
